Ancient native red grape variety, largely cultivated before the beginning of the 20th century when Phylloxera devastated most of the traditional vineyards of Friuli
Viticulture: single Guyot, grassed vineyard
Winemaking
Harvest: rigorously by hand during the first ten days of October. Part of the grapes is left dry naturally for about 8 weeks.
Vinification: 15/20-day maceration with manual punching-down of the cap Traditional fermentation
Ageing: in different-sized Slavonian oak barrels and further ageing in the bottle
Sensory notes
Colour: ruby red
Nose: concentrated and winey with pleasant notes of violet, blackberry, blackcurrant, and blueberry, the nose is uncompromising and confident
Palate: surefooted, dry, and firm the mouth mirrors the nose with a pronounced tannic weave
Food pairing: goes well with charcoal grilled meat, excels with game and hard savoury cheeses
Serving temperature: 18-20 °C
Alcohol content: 13% vol.
