Winemaking
Harvest: between the beginning and the end of October following the different stages of ripening
Vinification: crushing followed by maceration
Ageing: in different-sized French oak barrels and further ageing in the bottle
Sensory notes
Colour: impenetrable deep ruby red with purple highlights.
Nose: the bouquet of this blend is immediately concentrated and layered, offering hints of licorice, coffee beans and vanilla beans, cloves and black tea leaves. Aromatic and fruity with overtones of morello cherry and bilberry
Palate: in the mouth it is nicely contoured with an array of concentrated fruity aromas that mingle with spices and a slightly sweet note of dark chocolate enhanced by the elegant tannins
Food pairing: good with low-roasted lamb shank, charcoal grilled meat, mushroom based dishes, and hard savoury cheeses
Serving temperature: 18 °C
